Cooking dried raspberries.

Step 1: Prepare Raspberries

Step 2: Dry Raspberries

There are four ways to dry raspberries.

First way - drying in ovens. Place the raspberry pan in the desiccant. Turn on the device and warm up to 60 degrees. A desiccant removes moisture from any fruits and berries within 36 hours. Drying speed depends on the size and texture of fruits and berries. In a drying cabinet, raspberries dry for 12 hours. Check raspberries every two hours. Second way - drying in the open air. Do not wash or soak the berries! Place thick paper or cotton cloth on the baking sheet. Lay a raspberry on a prepared baking sheet with a thin layer and dry under the sun's rays periodically turning the berries over with a spatula so that they dry evenly from all sides. At night, put raspberries in a dry place where there is not much moisture and wind. Such drying takes approximately 5 to 7 days. You can string raspberries on a thread leaving a small distance from each other, such raspberries will dry much faster during 45 days, as it is dried and ventilated immediately from all sides.

Third way - drying in the oven. Do not wash or soak the berries! You lay the raspberries on a baking sheet and place in the oven, turn it on to 60 degrees and periodically adjust the temperature then lowering it to 40 degrees then raising it to 65 degrees. In the process of drying raspberries in the oven, you will have to control the uniformity of drying by periodically mixing the berries with a spatula so that they are not very dry and do not stick to the pan. Periodically keep the oven door open at intervals of 3-5 times for 5-6 minutes per 1 hour, so that the berries are not baked. Dry raspberries from 6 to 8 ocloc'k.

The fourth way is mixed. Do not wash or soak the berries! Put the baking tray with raspberries in a sunny place, dry in the open air for 2–3 days and complete the drying in an oven heated to 60–100 degrees for 4–5 hours or in a dryer for 3 hours. Stir raspberries gently with a spatula throughout the drying process.

Dried raspberries have a grayish - light burgundy color, the texture is dense, the structure is leathery, the berries do not stick together and do not stain the hands.
Put the dried raspberries in clean, sterile jars or paper and cellophane bags. Any container in which you are going to store dried berries should be half filled with them. Store dried raspberries in a dry, well-ventilated place. no more than 2 years.


Step 3: serve the dried raspberries

Dried raspberries are used for brewing vitamin teas, drinks, compotes, decoctions, infusions. It is also ground into powder and added to mousse, jelly, cakes, jelly. Recipe Tips:
