Making coffee "Borgia":

Step 1: Making coffee.

Ground coffee must be specially prepared for the Turk, so that it is finely ground. Turn on the fire and heat a little Turku, then pour a small pinch of salt and coffee at the rate of 1 teaspoon per 1 cup of coffee. Mix and let the coffee warm up a bit. Then pour water, add 1 teaspoon of sugar per cup and put on a slow fire. We are waiting for the coffee to boil and the foam to rise, remove from heat, mix and set again. The second time the foam should rise, we immediately remove and do not mix, let it fall. For the third time, we boil coffee just a little bit so that only the foam does not run away. At the very end, pour a teaspoon of ice water so that the thick settles to the bottom. Pour into melted chocolate cups. Chocolate can be melted either in a steam bath or in a microwave. The main thing is to grind it and put it right away into coffee cups.

Step 2: Cook the cream.

You can whip the cream either with a mixer or in a blender. In a narrow glass, pour the cream and add the icing sugar, whisk at an angle until a thick, uniform foam is formed. In order for the foam to be more airy and lighter, you can take cream of lower fat content. Put whipped cream in a cup of coffee. Pour the orange zest gently on top of everything.

Step 3: Serve the Borgia coffee.

You need to drink coffee in order to feel cheerfulness and confidence throughout the working day. And if you are tired and want to come to your senses in the evening, then I advise you to put in half less coffee, so the drink will raise your tone and cheer up a little.
